Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Beef Broth
  • 1 cup Coconut Milk
  • 1 tablespoon Thyme fresh, chopped
  • 1 teaspoon Black Pepper ground
  • 1 teaspoon Salt
  • 2 cups Spinach fresh, chopped

Instructions 

  1. 1. In a large pot, brown the beef stew meat over medium heat.
  2. 2. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  3. 3. Pour in the beef broth and coconut milk. Stir to combine.
  4. 4. Add the thyme, black pepper, and salt. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  5. 5. Add the chopped spinach and simmer for an additional 30 minutes.
  6. 6. Serve hot and enjoy!
