  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 Ripe bananas, mashed
  • 0.5 cup Granulated sugar
  • 0.25 cup Unsalted butter, melted
  • 1 Large egg
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with paper liners.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, combine the mashed bananas, sugar, melted butter, egg, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  6. Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
