Ingredients 

Main Ingredients

  • 2 ¼ teaspoon active dry yeast
  • 1 ½ cups warm water
  • ½ cup sugar
  • 2 units eggs beaten
  • 1 cup evaporated milk
  • 7 cups bread flour
  • ¼ cup shortening melted
  • 1 teaspoon salt
  • as needed unit vegetable oil for frying
  • as needed unit powdered sugar for dusting

Instructions 

  1. 1. In a large bowl, dissolve yeast in warm water. Add sugar, eggs, and evaporated milk. Mix well.
  2. 2. Stir in 4 cups of flour and beat until smooth. Add shortening and salt. Gradually add remaining flour, mixing until dough is smooth and elastic.
  3. 3. Cover and let rise in a warm place until doubled in size, about 1 hour.
  4. 4. Heat oil in a deep fryer to 375°F (190°C).
  5. 5. Roll out dough on a floured surface to ¼ inch thickness. Cut into 2 ½ inch squares.
  6. 6. Fry beignets in hot oil until golden brown, turning once. Drain on paper towels.
  7. 7. Dust with powdered sugar and serve warm.
