Main Ingredients
- 2 ¼ teaspoon active dry yeast
- 1 ½ cups warm water
- ½ cup sugar
- 2 units eggs beaten
- 1 cup evaporated milk
- 7 cups bread flour
- ¼ cup shortening melted
- 1 teaspoon salt
- as needed unit vegetable oil for frying
- as needed unit powdered sugar for dusting
1. In a large bowl, dissolve yeast in warm water. Add sugar, eggs, and evaporated milk. Mix well.
2. Stir in 4 cups of flour and beat until smooth. Add shortening and salt. Gradually add remaining flour, mixing until dough is smooth and elastic.
3. Cover and let rise in a warm place until doubled in size, about 1 hour.
4. Heat oil in a deep fryer to 375°F (190°C).
5. Roll out dough on a floured surface to ¼ inch thickness. Cut into 2 ½ inch squares.
6. Fry beignets in hot oil until golden brown, turning once. Drain on paper towels.
7. Dust with powdered sugar and serve warm.
