Main Ingredients

  • 1 cup Black beans cooked
  • 1 cup Sweet potato mashed
  • 4 Tortillas large
  • 1 cup Cheddar cheese shredded
  • 1 tablespoon Olive oil

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Spread mashed sweet potato on one half of each tortilla.
  3. Top with black beans and shredded cheese.
  4. Fold the tortillas in half and cook in the skillet until golden brown and the cheese is melted, about 3-4 minutes per side.
  5. Cut into wedges and serve warm.
