Ingredients

  • 1 head Broccoli chopped
  • 1 cup Stilton cheese crumbled
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until soft.
  2. 2. Add the chopped broccoli and vegetable broth. Bring to a boil, then simmer for 10-15 minutes until the broccoli is tender.
  3. 3. Blend the soup until smooth using a blender.
  4. 4. Return the soup to the pot, stir in the Stilton cheese and heavy cream. Season with salt and pepper to taste.
  5. 5. Serve hot.
