- 4 Chicken breasts, pounded thin
- 1 cup Breadcrumbs
- 1 cup Flour
- 2 Eggs, beaten
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 4 Bolillo rolls, sliced
- 1 cup Lettuce, shredded
- 1 cup Tomato, sliced
- 1 cup Avocado, sliced
- ½ cup Mayonnaise
1. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.
2. Dredge each chicken breast in flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
3. Heat oil in a frying pan over medium heat. Fry the breaded chicken breasts until golden brown and cooked through, about 4-5 minutes per side.
4. Remove the chicken from the pan and let it drain on paper towels.
5. Spread mayonnaise on the sliced bolillo rolls. Assemble the tortas with lettuce, tomato, avocado, and the fried chicken breasts.
6. Serve immediately and enjoy!
