Chipotle Barbacoa Recipe

- 3 lbs Beef Chuck Roast cut into chunks
- 3 pcs Chipotle Peppers in Adobo Sauce canned
- 1 tablespoon Ground Cumin
- 1 tablespoon Dried Oregano
- 6 cloves Garlic minced
- 1 cup Beef Broth
- ¼ cup Apple Cider Vinegar
- 2 pcs Bay Leaves
- 1 teaspoon Salt or to taste
- ½ teaspoon Black Pepper or to taste
1. Blend the chipotle peppers, cumin, oregano, garlic, beef broth, and apple cider vinegar until smooth.
2. Place the beef chunks in the slow cooker. Pour the blended mixture over the beef.
3. Add the bay leaves, salt, and black pepper.
4. Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
5. Shred the beef with two forks and mix it with the juices in the slow cooker. Serve hot.
