Ingredients

  • 1 cup quinoa cooked
  • 1 cup black beans rinsed and drained
  • 1 avocado sliced
  • 12 oz shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1 cup corn cooked
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon cilantro chopped

Instructions 

  1. 1. Cook the quinoa according to package instructions.
  2. 2. In a skillet, heat olive oil over medium heat. Add shrimp, cumin, paprika, salt, and black pepper. Cook until shrimp is pink and cooked through, about 4-5 minutes.
  3. 3. In a large mixing bowl, combine cooked quinoa, black beans, avocado, cherry tomatoes, corn, and cooked shrimp.
  4. 4. Drizzle lime juice over the mixture and toss gently to combine.
  5. 5. Garnish with chopped cilantro and serve immediately.
