Ham Bone and Vegetable Soup
A hearty and flavorful soup made with a leftover ham bone and fresh vegetables.

Main Ingredients
- 1 Ham bone with some meat still on
- 8 cups Water
- 2 cups Carrots chopped
- 2 cups Celery chopped
- 1 cup Onion chopped
- 2 cups Potatoes diced
- 1 can Diced tomatoes 14.5 oz
- 2 cloves Garlic minced
- 1 teaspoon Thyme dried
- 1 teaspoon Salt or to taste
- ½ teaspoon Black pepper or to taste
Place the ham bone in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour.
Remove the ham bone and set aside to cool. Add the carrots, celery, onion, potatoes, diced tomatoes, garlic, thyme, salt, and pepper to the pot. Simmer for another hour.
Once the ham bone is cool enough to handle, remove any remaining meat and add it back to the soup. Discard the bone.
Continue to simmer the soup until the vegetables are tender. Adjust seasoning as needed. Serve hot.
