Hiyashi Chuka Noodles Recipe
A refreshing Japanese cold noodle dish perfect for hot summer days.

Main Ingredients
- 400 g Chuka noodles or any other type of ramen noodles
- 2 pieces Eggs beaten
- 100 g Ham sliced into thin strips
- 1 piece Cucumber julienned
- 1 piece Tomato sliced
- 2 tablespoons Soy sauce
- 2 tablespoons Rice vinegar
- 1 tablespoon Sugar
- 1 teaspoon Sesame oil
- 1 teaspoon Mustard optional
Cook the noodles according to the package instructions. Drain and rinse under cold water. Set aside.
In a small bowl, mix soy sauce, rice vinegar, sugar, sesame oil, and mustard (if using). Set aside.
Heat a non-stick pan over medium heat. Pour in the beaten eggs and cook until set. Remove from the pan and slice into thin strips.
Arrange the noodles on a plate. Top with ham, cucumber, tomato, and egg strips.
Pour the sauce over the noodles and toppings. Serve immediately.
