Italian Sausage Soup Recipe
A hearty and flavorful soup made with Italian sausage, vegetables, and beans.

Main Ingredients
- 1 lb Italian sausage casings removed
- 1 onion chopped
- 3 cloves garlic minced
- 2 cups carrots sliced
- 2 cups celery sliced
- 6 cups chicken broth
- 1 can diced tomatoes 14.5 oz
- 1 can cannellini beans drained and rinsed
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt to taste
- 1 teaspoon black pepper to taste
- 2 cups spinach fresh, chopped
1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
2. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
3. Add the sliced carrots and celery. Cook for about 5 minutes until they start to soften.
4. Pour in the chicken broth, diced tomatoes, and cannellini beans. Stir in the dried basil, oregano, salt, and pepper.
5. Return the cooked sausage to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
6. Stir in the chopped spinach and cook for another 5 minutes until the spinach is wilted.
7. Serve hot and enjoy!
