Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1 cup red lentils
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh parsley, chopped
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add the onion and celery, and cook until softened, about 5 minutes.
  2. Add the garlic, cumin, cinnamon, ginger, and turmeric. Cook for another minute until fragrant.
  3. Stir in the lentils, chickpeas, tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Add the cilantro and parsley. Season with salt and pepper to taste. Simmer for another 5 minutes.
  5. Serve hot, garnished with additional fresh herbs if desired.
