Moroccan Harira Soup Recipe
A hearty Moroccan soup made with tomatoes, lentils, chickpeas, and fresh herbs. Perfect for a cozy meal.

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 1 cup red lentils
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 6 cups vegetable broth
- 1 cup fresh cilantro, chopped
- 1 cup fresh parsley, chopped
- to taste salt and pepper
Heat olive oil in a large pot over medium heat. Add the onion and celery, and cook until softened, about 5 minutes.
Add the garlic, cumin, cinnamon, ginger, and turmeric. Cook for another minute until fragrant.
Stir in the lentils, chickpeas, tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
Add the cilantro and parsley. Season with salt and pepper to taste. Simmer for another 5 minutes.
Serve hot, garnished with additional fresh herbs if desired.
