Ingredients 

Main Ingredients

  • 1 medium Eggplant sliced into rounds
  • 1 medium Zucchini sliced into rounds
  • 1 medium Yellow Squash sliced into rounds
  • 1 medium Red Bell Pepper sliced into rounds
  • 1 medium Yellow Bell Pepper sliced into rounds
  • 1 medium Onion sliced into rounds
  • 4 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • 1 can Tomato Sauce 14 oz

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Spread the tomato sauce on the bottom of a baking dish.
  3. Arrange the sliced vegetables in alternating patterns on top of the sauce.
  4. Drizzle olive oil over the vegetables and season with salt, pepper, thyme, and oregano.
  5. Cover the dish with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 10 minutes, or until the vegetables are tender.
  7. Serve hot as a main dish or a side.
