  • 4 cups Whole milk
  • 1 cup Heavy cream
  • ½ teaspoon Salt
  • 3 tablespoons Lemon juice

Instructions 

  1. 1. In a large pot, combine milk, cream, and salt. Heat until almost boiling.
  2. 2. Remove from heat and stir in lemon juice. Let sit for 5-10 minutes.
  3. 3. Line a strainer with cheesecloth and place over a bowl. Pour the mixture into the strainer and let it drain for about 20 minutes.
  4. 4. Transfer the ricotta to a bowl and use immediately or refrigerate.
