Ingredients 

Main Ingredients

  • 1 lb Shrimp shells from about 2 pounds of shrimp
  • 1 medium Onion chopped
  • 2 stalks Celery chopped
  • 1 medium Carrot chopped
  • 2 cloves Garlic smashed
  • 1 tablespoon Tomato paste
  • 8 cups Water
  • 2 sprigs Thyme
  • 1 teaspoon Black peppercorns
  • 2 bay leaves Bay leaves

Instructions 

  1. 1. In a large pot, combine shrimp shells, onion, celery, carrot, garlic, and tomato paste.
  2. 2. Add water, thyme, peppercorns, and bay leaves. Bring to a boil.
  3. 3. Reduce heat and simmer for 45 minutes.
  4. 4. Strain the stock through a fine-mesh strainer. Discard solids.
  5. 5. Use immediately or store in the refrigerator for up to 3 days or freeze for up to 3 months.
