Ingredients

  • 2 cups split peas rinsed and sorted
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 3 carrots carrots chopped
  • 2 stalks celery chopped
  • 1 teaspoon thyme dried
  • 1 teaspoon smoked paprika
  • 1 bay leaf bay leaf
  • 6 cups vegetable broth
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. 2. Add the carrots and celery, and cook for a few more minutes.
  3. 3. Stir in the split peas, thyme, smoked paprika, bay leaf, and vegetable broth.
  4. 4. Bring to a boil, then reduce heat and simmer for about an hour, or until the peas are tender.
  5. 5. Season with salt and pepper to taste. Remove the bay leaf before serving.
