Ingredients 

Main Ingredients

  • 2 cups White Beans cooked
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Thyme dried

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the cooked white beans, vegetable broth, salt, black pepper, and thyme. Stir to combine.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
  6. Use an immersion blender to puree the soup until smooth, or leave it chunky if you prefer.
  7. Serve hot and enjoy!
