- 1 large butternut squash peeled, seeded, and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
In a large bowl, toss the butternut squash cubes with olive oil, salt, and pepper.
Spread the squash in a single layer on the prepared baking sheet.
Bake for 40 minutes, or until the squash is tender and lightly browned, stirring halfway through.
