Black Beans and Rice Recipe

Main Ingredients
- 1 cup rice uncooked
- 1 can black beans drained and rinsed
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups vegetable broth
- 1 lime juiced
- ¼ cup cilantro chopped
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add rice, cumin, salt, and black pepper. Stir to combine.
5. Pour in vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
6. Stir in black beans and cook for an additional 5 minutes, until heated through.
7. Remove from heat and stir in lime juice and chopped cilantro.
8. Serve warm and enjoy!
