Ingredients 

Main Ingredients

  • 1 cup rice uncooked
  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups vegetable broth
  • 1 lime juiced
  • ¼ cup cilantro chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in minced garlic and cook for another minute.
  4. 4. Add rice, cumin, salt, and black pepper. Stir to combine.
  5. 5. Pour in vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  6. 6. Stir in black beans and cook for an additional 5 minutes, until heated through.
  7. 7. Remove from heat and stir in lime juice and chopped cilantro.
  8. 8. Serve warm and enjoy!
