Ingredients

  • 3 pounds corned beef brisket with spice packet
  • 4 cups water
  • 1 large onion quartered
  • 3 cloves garlic minced
  • 1 pound carrots peeled and cut into chunks
  • 1 head cabbage cut into wedges

Instructions 

  1. Place the corned beef brisket, spice packet, garlic, and onion in the Instant Pot.
  2. Add water until the brisket is almost covered.
  3. Close the lid and set the Instant Pot to 'Manual' for 90 minutes.
  4. Once the cooking time is complete, allow the pressure to release naturally for about 15 minutes.
  5. Open the lid and add the carrots and cabbage. Close the lid and set the Instant Pot to 'Manual' for 5 more minutes.
  6. Quick release the pressure and remove the lid. Serve the corned beef with the vegetables.
