Ingredients

  • 4 pieces Chicken Breasts boneless, skinless
  • ½ cup Flour
  • ¼ cup Olive Oil
  • ½ cup Chicken Broth
  • ¼ cup Lemon Juice freshly squeezed
  • 2 tablespoon Capers drained
  • 2 tablespoon Butter
  • to taste Salt and Pepper

Instructions 

  1. 1. Season chicken breasts with salt and pepper, then dredge in flour.
  2. 2. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown, about 3-4 minutes per side. Remove and set aside.
  3. 3. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a boil, scraping up brown bits from the pan.
  4. 4. Return chicken to the skillet and simmer for 5 minutes. Remove chicken and stir butter into the sauce until melted.
  5. 5. Serve chicken with sauce poured over the top. Garnish with lemon slices and parsley if desired.
